Gather the good stuff

  • 1 can (15 oz) black beans, rinsed and drained
  • 3/4 cup thawed corn, patted dry
  • 1 1/2 cups shredded cheddar or Monterey Jack
  • 2 tsp Chica Celita's Seasoning
  • 4 large (10-inch) flour tortillas
  • 2 tsp neutral oil, divided
  • 3/4 cup Chica Celita's Medium Salsa, for dipping
  • Optional: lime wedges and 1/4 cup sour cream

Let’s make it

  1. Mash half the beans in a bowl. Fold in the remaining beans, corn, cheese and seasoning.
  2. Spread one-quarter of the filling over half of each tortilla, then fold closed.
  3. Heat a little oil in a large skillet over medium-low heat. Cook one quesadilla at a time for 3–4 minutes per side, until crisp and the cheese has melted. Lower the heat if it browns too quickly.
  4. Rest for 1 minute, cut into wedges and serve with salsa. Add lime and sour cream if you like.
